Kuih Kaswi

Kuih Kaswi

One of the kids' favourite. Traditional delicacies are my kids favourite. They love to eat kuih akok, kuih cara, kuih lapis, kuih kaswi, buah melaka, kuih peneram, kuih bahulu..and almost everything about the Malay traditional delicacies, and they love the one that is homemade by their mommy. And lucky for their mommy, she have the magical old antique recipe book from their grandmom.

Recipe

2 cups plain flour
1/2 cup tapioca flour
1/2 cup rice flour
a pinch of salt
2 cups water
1 and a half cup brown sugar syrup
1/2 cup sugar
a couple of pandan leave
3 tbsp of lime stone paste liquid (air kapur)
some grated coconut (plus a pinch of salt for garnishing)

* boil brown sugar (1 big piece of "gula kabung/ palm sugar block") and 1/2 cup sugar to get 1 1/2 cup of brown sugar syrup (add in a couple of pandan leave to get a beautiful aroma)
* combine all of the ingredients with the brown sugar syrup and give it a good stir (the easiest way is to use the food processor or the food blender)
* steam the batter/mix (if you are using a big mould, steam it for about 45 minutes to 1 hour, if you are using a small mould, steam it for about 15 minutes)
* let it cold before serving the kuih kaswi with grated coconut garnishing
