Chocolate Eclairs & Cream Puff

Try out these two delicacies for tea, easy to bake and yummy to eat. Different type of filling from custard, cream, chocolate, fresh fruit and ice cream can add up to the variety of taste.


Cream Puff
Recipe
1/2 cup milk
1/2 cup water
3 oz unsalted butter
1 cup flour
1 tsp sugar
1/4 salt
4-5 eggs

Bring water, butter and milk to boil. Add in flour and stir it togeteher (using a medium high flame). Cool of the dough. Put an egg one at a time. Put into pastry bag, pipe into 1 1/2 inch wide circle and bake for 200 degree C for 10 minutes and drop to 180 degree C for 15 minutes. Pipe in the filling and garnish with powder sugar.

The same recipe can also be used to make Chocolate Eclairs. Pipe into medium long dough. Garnish with chocolate ganache.

Kuih Kaswi

Kuih Kaswi

One of the kids' favourite. Traditional delicacies are my kids favourite. They love to eat kuih akok, kuih cara, kuih lapis, kuih kaswi, buah melaka, kuih peneram, kuih bahulu..and almost everything about the Malay traditional delicacies, and they love the one that is homemade by their mommy. And lucky for their mommy, she have the magical old antique recipe book from their grandmom.

Recipe

2 cups plain flour
1/2 cup tapioca flour
1/2 cup rice flour
a pinch of salt
2 cups water
1 and a half cup brown sugar syrup
1/2 cup sugar
a couple of pandan leave
3 tbsp of lime stone paste liquid (air kapur)
some grated coconut (plus a pinch of salt for garnishing)

* boil brown sugar (1 big piece of "gula kabung/ palm sugar block") and 1/2 cup sugar to get 1 1/2 cup of brown sugar syrup (add in a couple of pandan leave to get a beautiful aroma)
* combine all of the ingredients with the brown sugar syrup and give it a good stir (the easiest way is to use the food processor or the food blender)
* steam the batter/mix (if you are using a big mould, steam it for about 45 minutes to 1 hour, if you are using a small mould, steam it for about 15 minutes)
* let it cold before serving the kuih kaswi with grated coconut garnishing

Kuih Gandos - kuih terakhir untuk arwah Bapak

"boleh buatkan bapak kuih gandos tak?, anis letak tepung pulut, campur tepung gandum sikit, letak kelapa parut, gula, bancuh dgn air lepas tu bakar ya..."

Tak pernah selama ni buat kuih gandos, Kuih Gandos ni kuih tradisi orang Jawa...selalunya dulu masa kecik, tengok mak masak kuih ni. Acuan kuih gandos mak pun dah tak ada..macamana ya???

Kebetulan minggu kedua bulan April, ikut suami balik ke Kedah, sempat singgah di Pekan Rabu, memang tujuannya nak cari acuan Kuih Gandos ni..yang juga acuan Kuih Dangai/Rangin.

Balik dari Kedah, bila pergi menziarah mak dan bapak, beritahu bapak, dah beli acuan Kuih Gandos ni, dan akan cuba buatkan untk bapak.

Hari Isnin masa first time buat kuih tu, bapak kata kurang lembut, padahal mak, kakak, abang Man dan abang Sidek kata dah lembut elok dah tu. Tak apa la, janji dengan bapak esok nak buatkan lagi. Hari Selasa, buatkan lagi kuih Gandos utk bapak, memang lembut, tapi bapak kata kurang hangit pulak, namun bapak masih menjamah lagi kuih tu. Sebelum balik petang tu, bapak pesan lagi "lain kali kalau anis buat kuih Gandos, bakar atas api dapur ya, jangan dalam oven, nanti dia tak jadi hangit, letak atas api, tutup dengan tudung periuk, macam anis buat kuih cara tu"..

Rupa-rupanya, itu pesanan terakhir bapak untuk anaknya yang memang suka memasak ni dan itu jugalah kali terakhir bapak merasa air tangan anaknya, kerana pada hari Rabu 20/4/2011, bapak menghembuskan nafasnya yang terakhir. AlFatihah.

Resipi

1 cawan tepung gandum
1/4 cawan tepung pulut
1/2 cawan kelapa parut (putih saja, kalau dapat kelapa inti lagi cantik)
1/4 cawan gula
sedikit garam
air secukupnya

Campurkan semua bahan, untuk dapat adunan seakan bancuhan adunan nak buat kuih cara
Masukkan dalam acuan dan bakar.

"Mommy did you forget to put sugar in your sponge cake?"

"MasyaAllah!!! iya la mommy terlupa la..letak aje gula caster ni depan mata..tapi tak bubuh masa adun tadi.."..Phew!!! How can I forgot!. I really forgot to put the caster sugar in the cake batter when I mix it earlier. After I sliced the cakes before decorating them, there was some broken pieces of it, as usual my daughter will be the one who is going to finish it up, but when she popped the cake pieces into her mouth, she told me that the cake didn't taste like the usual one.

For some, it can be a total mess right!..but, as I were going to make a Chocolate Banana Mousse Cake and Strawberry Layer Cake, I regarded the problem as a minor one. The chocolate mousse and the chocolate ganache will surely add up to the sweetness taste to the cake, same goes to the strawberry layer cake, where the creamy topping and the sour taste of strawberry will add up to the taste and flavour.

Tawakkaltu ala Allah...the cake turned out great..and from a mistake, I learnt that those cakes are best to suit the need of diabetic patient. They too can enjoy eating a nice, awesome and tasty cake without having to worry about the sugary problem. Thank you Allah for another great thing and idea of invention You granted me with.

Everyday Cakes

How would one feel if they can have the so called birthday almost everyday!!!. Well, this is what my kids have almost everyday. I bake cakes almost everyday. Yeah, sometimes I bake to fulfill customers' order and MOST of the time I bake to fulfill my kids' craving for cakes. They never got bored eating the cakes!!!

From the simplest cake to the so called super duper cakes...I try my very best to bake them. From one experiment to another experiment, some come out perfectly, some can be improved, and alhamdulillah I've never came across to a total disaster. If one has the flare in writing, can I be regarded as having the flare in cooking?...hehehe..

The Impact of "The "F" Word" Programme by Chef Gordon Ramsay

Credit should be given to Chef Gordon Ramsay and his programme "The F Word". Having a passion in cooking especially in chocolate making, mommy has by all mean search for the "Churros" recipe (with 'Ariff's help who remembered the name of the dish) and successfully made it. Abah lend his helping hand in mixing the dough, since mommy's mixture is out of order. The taste is wonderful and awesome especially when the "Churros" is dip into the finger licking chocolate ganache which is also handmade by mommy. With the thumbs up from the kiddos as the quality controller, mommy has decided to add in the "Churros" as one of the specialty in mommy's decorative homemade chocolate business.

Awesome "Churros" n Chocolate Ganache

From "The F Word" to "Mommy's Kitchen"

RECIPE
(adapted from Cooks.com)

1 cup water
1/4 cup butter
3/4 cup sugar or 2 tbsp sugar (save some for garnishing)
1/4 tsp salt
1 cup flour
2 large eggs (3 small eggs)
vegetable oil for frying
1 tsp ground cinnamon

* combine water, butter, sugar and salt in a pot
* bring to boil
* remove from heat, stir in flour (use wooden spoon) until dough forms a ball and doesn't stick at the side of the pot
* beat egg separately and add them one at a time to the mix (dough)
* fill the dough into a pipping/pastry bag (use a large star nozzle/tip
* heat the oil for frying (deep fry)
* pipe the pastry dough for about 4 inches long
* cook until they are light brown in color.
* drain off the excess oil
* roll the churros in the sugar + cinnamon till evenly covered.

Serve churros with Chocolate dip (you can use chocolate ganache).

Super Happy Moment for a Mom

Craving into your own homemade food is heaven. Seeing your kids finishing the food and complimenting your dishes is one of the super happy moment for being a mom. I love cooking, I love baking and most importantly my kids, my husband and my family love eating what I prepared for them.
